Vineyard Notes
Merlot flourishes in the western portion of our estate, where cool, fog-laden mornings and gentle afternoon warmth create ideal conditions for slow, even ripening. This microclimate enhances the varietal’s natural richness, developing concentrated fruit character and balanced acidity. Deeper valley floor soils add structure and depth, resulting in a Merlot with remarkable
complexity and an authentic expression of Sonoma Valley.
Winemaker Notes
Following destemming, the grapes were introduced to cold tanks and allowed to warm gradually as fermentation commenced. Daily tastings were conducted to determine the optimal moment for draining and pressing. After two to three weeks, the wine was transferred to barrels to complete secondary fermentation.
Food Pairing Notes
Pair with Beef Bourguignon. This classic pairing is excellent because the Merlot's moderate, polished tannins are structured enough to cut through the richness and fat of the braised beef without clashing with the stew's cooking wine. Furthermore, the wine's characteristic vibrant red fruit flavors echo and amplify the deep, complex, savory notes imparted by the long-braised sauce, creating a delightful culinary experience.
