2023 Terra Collection Cabernet Sauvignon, Sonoma County

The nose presents aromas of dark cherry and plum, with secondary notes of roasted coffee and clove. On the palate, the wine is full-bodied and well-structured, with a plush texture. Flavors of concentrated dark fruit, dark chocolate, and a hint of anise carry through. The finish is persistent and polished, with a lingering impression of violet and toasted oak.

Label Artwork: Bold and bright, with a touch of richness. The same free-form and funky pattern as our Terra Collection Californian white wines, but in a new color profile to represent our red wines historically grown in Sonoma, such as Pinot Noir and Cabernet Sauvignon.

Vineyard Notes
Sourced from Norris Vineyard in Sonoma’s Chalk Hill AVA, this Cabernet Sauvignon is a vivid expression of Sonoma’s extraordinary terroir. This site, with its unique microclimate and well-drained soils, yields fruit of remarkable structure and finesse. The distinct character of the vineyard’s fruit is fully expressed in the bottle, resulting in a Cabernet Sauvignon that is both powerful and elegant.
Production Notes
1st Bottling
Winemaker Notes
Grapes were harvested in the early morning so the grapes arrived cold to the winery. The juice was cold soaked for 48 hrs before being inoculated with multiple strains of yeast (FX10, Melody, Clos, BO213) and fermentation lasted between 10 and 16 days. The wine was aged for 18 months before being bottled.
Food Pairing Notes
Pair with a hearty baked Cannelloni stuffed with veal, ricotta and spinach with tomato sauce. The rich, savory meat filling and creamy ricotta are a perfect complement to the wine’s firm tannins and full body, while the rich tomato sauce mirrors its bright acidity.
