		Wine Profile

		Vineyard Notes
This Sonoma-born Sauvignon Blanc vividly expresses the region’s diverse terroir, a testament to its varied microclimates and exceptional vineyard sites. From the cooler, coastal-influenced vineyards, we source fruit providing a vibrant core of zesty citrus and racy acidity. Fruit from warmer inland vineyards adds a layer of bright tropical fruit and luscious texture, while a touch from a well-drained hillside site contributes structured finesse and a refreshing mineral streak.
		Winemaker Notes
The grapes were machine harvested in the cool of the early morning and immediately pressed. The juice was then clarified and fermented for three weeks in stainless steel. After fermentation, the wine aged for three months in a tank.
		Food Pairing Notes
Pair with Lemon Ricotta Ravioli. The crisp acidity of the wine is a perfect counterpoint to the creamy texture of the ricotta. The wine’s bright citrus notes beautifully echo the lemon in the ravioli, creating a seamless and refreshing flavor profile.
