2021 Cabernet Sauvignon, Olive Hill Estate, Sonoma Valley
The wine’s deep ruby appearance leads to a bouquet of black fruit, oak and vanilla. On the palate, a full-bodied silkiness unfolds, with structured tannins providing a framework for rich black fruit and spice, culminating in a smooth, satisfying finish.

Wine Profile
Vineyard Notes
Our Cabernet Sauvignon is born from the sun-drenched hillside blocks of our Olive Hill Estate, nestled between the Mayacamas and Sonoma Mountains. The estate’s unique microclimate, with natural frost protection from underground hot springs and low-vigor volcanic soils, allows for the cultivation of small, intensely flavored berries.
Winemaker Notes
We begin with hand-sorting in the vineyard, followed by a four-day cold-soak to gently coax out the grapes’ essence. Ten days on the skins, natural malolactic fermentation in barrel, and the careful selection of free run and light press wines allow us to craft a wine that truly reflects the terroir of our vineyards.
Food Pairing Notes
Pair with eggplant Parmesan, layered with marinara sauce, mozzarella, and ricotta cheese.
