We begin fermentation in glycol-jacketed stainless steel tanks, carefully managing temperature and performing twice-daily pumpovers. Following primary fermentation, the wine completes malolactic conversion in French oak. Three rackings ensure clarity and integration before further French oak aging. The Sonoma blend is then crafted from a rigorous barrel selection, selecting only the best.
