We gently pressed the grapes while still cool from the morning fog, ensuring the preservation of delicate aromatics. A long, cool fermentation in stainless steel, followed by four months of sur lie aging, allowed the wine to develop complexity while maintaining its crisp, refreshing character. A gentle filtration prepared the wine for bottling, ensuring its pristine quality.
