Vineyard Notes
Early budbreak, a warm growing season and lower tonnage per acre led to an early harvest in 2021. The pleasant weather allowed for even ripening and excellent quality. South- and west-facing slopes provided consistent sun exposure, helping drive ripeness, while elevation and afternoon breezes off the valley floor helped retain freshness. The blocks often sit above the fog line and feature well-draining volcanic and loam soils, supporting balanced vine growth and concentrated fruit.
Winemaker Notes
Hand-harvested and destemmed, the must was transferred to tank for a four-day cold soak to build color and aromatics before being allowed to warm naturally and inoculated with select yeast strains from Bordeaux. A two-week fermentation with regular pump-overs achieved balanced extraction of tannin and flavor. The wine was then gently pressed and transferred to barrel for malolactic fermentation and aged in the Kunde caves for around 18 months, allowing for gradual integration and development, before a gentle filtration and bottling.
Food Pairing Notes
This Bordeaux-based blend pairs well with a hearty steak or roasted portobello mushrooms. Its firm tannins bind with the meat’s richness, softening the wine while enhancing its structure. The savory, earthy notes complement the mushrooms, with enough acidity for balance.
