Vineyard Notes
The red loam soils of the Kunde estate provide an excellent foundation for growing exceptional Cabernet. Harvesting in October allows for extended hang time, enabling the fruit to fully express the distinctive terroir of the Sonoma Valley. The estate's unique combination of soil composition and growing conditions consistently produces wines of character and depth.
Winemaker Notes
We ferment the fruit from our Cabernet Sauvignon vineyards separately to assess characteristics of each block. Once in barrel, we allow the wine to evolve undisturbed for several months, enabling the tannins to soften, flavors to integrate, and the wine to develop its inherent complexity.
Food Pairing Notes
Pair with beef tenderloin finished in a blackberry and red wine reduction. The wine's firm tannin structure and dark fruit profile mirror the reduction's depth while enhancing the savory richness of the meat.
