Winemaker Notes
Sorted in the vineyard, the grapes were destemmed and pressed immediately upon arrival, still cool from the morning fog. The juice was settled overnight to preserve fresh aromatics, then racked off heavy lees into stainless steel for a cool three-week fermentation. It was then aged on fine lees in tank for four months before light filtration and bottling.

The wine’s bright acidity and citrus notes complement the vinaigrette, while lifting the beets.
