Wine Profile
Vineyard Notes
Our Quattro, Italian for the number four, is a blend of four varietals, sourced from across Sonoma County. Cabernet Sauvignon and Barbera from the Wildwood Vineyard in the Moon Mountain District, Sangiovese from the Wildwood Vineyard in Sonoma Valley, and a small amount of Petit Verdot from Serres Ranch in Sonoma Valley. This blend is crafted for its layered complexity, with Cabernet’s structure, Barbera’s acidity, Sangiovese’s savoriness, and Petit Verdot’s depth.
Winemaker Notes
The foundation of this wine lies in the early morning harvest and the co-fermentation of Cabernet Sauvignon, Barbera, and Sangiovese in stainless steel tanks – leading to greater complexity and a more generous mouthfeel. After a 48-hour cold soak, we introduced D254 yeast, known for revealing intense fruit and adding richness to the palate. The wine was drained off the skins for 21 days before being pressed, then moved to barrel for 21 months before being bottled.
Food Pairing Notes
Pair with Bistecca alla Fiorentina (Florentine Steak). The steak’s rich, marbled texture and the smoky char complement the wine’s powerful tannins and fruity notes.
