2022 Altura Collection Cabernet Sauvignon, Sonoma Valley
Notes of dark cherry, blueberry, cinnamon, vanilla and caramel pop in the aromatics. Hints of bright cherry pop on the palate with plum and a touch of violets intertwined with cedar. The mouthfeel has rich, round tannins and finishes with beautiful sweet oak.

Wine Profile
Vineyard Notes
We carefully selected grapes from four exceptional vineyards to craft this Cabernet Sauvignon. Passatiempo Vineyard in Sonoma Mountain provides the wine’s core, while Charlie Smith Vineyard in the Moon Mountain District adds intensity. Norris Vineyard in Chalk Hill contributes elegance, and Serres Vineyard in Sonoma Valley adds a touch of Petite Sirah for complexity.
Winemaker Notes
Our aim was to create a wine of both structure and finesse. To achieve this, we cold-settled the early morning harvested grapes, then fermented at 80°F with FX 10 yeast, a strain selected for its ability to develop a supple, rounded mouthfeel. After a 12-day fermentation and gentle pressing, the wine spent 19 months in barrel, allowing the oak to subtly enhance the fruit and create a wine with exceptional depth and complexity.
Food Pairing Notes
Pair with braised short ribs served over creamy polenta. The ribs' savory depth and the wine's dark fruit and spice notes are beautifully complemented by the polenta's smooth, rich texture.
