Wine Profile
Vineyard Notes
Our Estate Chardonnay is made of 100% fruit from our Estate Vineyard on the Viansa property, and is comprised of clones 4, 97, and 37.
Winemaker Notes
Harvested cold at night to preserve freshness, the grapes underwent a 48-hour cold soak for optimal color extraction. Each clone was individually fermented with AMH yeast to enhance fruit and spicy aromatics, with temperatures carefully managed up to 85°F for 14 days on skins to balance tannin and delicate aroma development. The wine then aged for eight months in a blend of 27% new French oak from Francoise Freres, Quintessence, and Damy, and 73% neutral French oak before bottling.
Food Pairing Notes
Pair with seared duck breast with blackberry jus. Our Pinot Noir’s bright acidity cuts through the richness of the duck, while the sweet and tart blackberry jus mirrors the wine’s fruit notes. Additionally, the wine’s earthy undertones can beautifully complement the savory depth of the duck.
Other Notes
Behind the Label: Dark berries and earthy aromas add deep purple tones, while the splashes of blue represent the pond that borders our Pinot Noir vineyard.
